Company: “Tex-Mex” Theme Restaurant and Bar Chain
Situation: The Company was struggling after opening many new locations.
Focus Scope: A Focus Professional was engaged by a mid-size restaurant chain in the southwest to help improve operating results.
Tasks Performed:
- Focus analyzed operating results on a location-by-location basis, visited locations, reviewed menus and beverage inventories and assessed location management capabilities.
- The Focus Professional recommended changes to menus in order to eliminate bottlenecks in operations and improve table turnover.
- Following a benchmarking study of competing local hospitality options, price adjustments were made to both menu and bar items.
Results: Four unprofitable locations were targeted for closure, and Focus led the process to strengthen the facility management team.
